Since my wife needs to restrict carb intake, I've been making some lower carb stuff for her.

Last night I made almond bread, which I've made several times before. Very simple and it's quite nice:
https://pasteimg.com/image/img-20240421-173341003.h27cI

Tastes great with just butter, or whatever you might want on it. I enjoy it. It also holds together nicely. Will last about two days wrapped in parchment at room temp.

I grabbed this recipe from this page:

The author wrote, "Baking Powder – I always use gluten-free, but any
kind will work." WTF? *All* baking powder is gluten free. Actually, a
tiny bit of wheat gluten helps almond flour more closely resemble bread
flour.

I tried the low carb flour tortillas, then decided that flour tortillas
aren't that entertaining to begin with. A real, super great corn
tortilla is 19g digestible carb. One has to pick and choose carbs. Two
tortillas is 38g. Almond flour is better for sweets than bread, and if
you're not familiar with allulose, you should get some. Just like with
sugar alcohols, some folks have digestive issues, but I never have. That
reminds me that I just opened the last bag yesterday. I often squeeze
my wife grapefruit juice, then I polish off the leftover fiber (pulp,
etc.) with added allulose, and sometimes a little sucralose mixed in.
https://www.amazon.com/dp/B0CCZVBZ9V
Allulose has almost none of the weird cooling sensation of erythritol,
which is the pick of the sugar alcohols.

Lol, yes, I noticed that also. (I believe my car is also gluten free :)

I have not heard of allulose, but will look into it, thanks! This bread actually comes out quite nice. She had been buying (low carb) bread, but says this bread tastes much much better, and she does not notice any reaction to it.

That looks very nice, Retro. I was able to see the bread image. Didn't
appreciate being asked to install the Rapport extension in order to view it.

Strange, I used pastimg.com. I was never asked to install an extension. Is there a suggested image paste site people like?

Well, I think I know what's wrong. Tojo coming back after he promised not
to ... that's a great help, but we will never be back to normal until kuth
and the texas midget squirtz comes back too.

It would even help a little if Popeye came back also, but he's surely dead
by now and buried at some convent, with a soiled kotex shoved in his mouth.
